Get ready to live an unforgettable experience here at Cantina Provolo, a place where tradition intertwines with innovation and wine tells stories of passion and mastery. The Aged in Wood Experience is a special experience, ideal for those who love well-structured wines, with pronounced intensity and a medium-high alcohol content.
Our private tour begins by showing you the extent of our vineyards, with particular attention to the training system used and the typical soil that characterizes our area. We will then guide you to discover the historical part of the winery, created from a tunnel built during the Second World War, once a secret escape route connecting the house to the woods.
The visit continues into the area dedicated to actual wine production, where you will see the historic cement tanks and, further on, the modern stainless-steel tanks.
Next, we will enter the historical archive of Cantina Provolo, the highlight of the tour: here, highly prized bottles owned by the family are preserved, including the very first bottles crafted by our grandfather, telling the story of our evolving identity through the decades.
Afterward, we will descend into the underground barrel cellar, where our finest wines — including Tuja, our Garganega that is fermented and aged in wood, as well as Amarone, Valpolicella Ripasso, and others — rest in barrels for many years. A magical and enveloping atmosphere will intoxicate you, leaving you fascinated by the sense of serenity and silence that fills the space.
To conclude the journey into our world, we will visit the bottling area, where you will discover how our bottling system works and learn about the different types of corks.
After the tour, an exclusive tasting awaits you featuring 4 magnificent wines aged in wood, each the result of a long and complex production process. The tasting includes:
- TUJA, GARGANEGA VERONESE
- GINO, ROSSO VENETO
- CAMPOTORBIAN, VALPOLICELLA RIPASSO
- AMARONE DELLA VALPOLICELLA
The tasting will be accompanied by artisanal rustic breadsticks. Upon request, you can add a platter of selected local cured meats and cheeses for an additional price.
