About Winery and Wines

The Bajta Fattoria Carsica is a family-run livestock farm and winery located in Sgonico on the Carsic plateau of Trieste. Established in 1988 by Magda and Slavko, who started the business after leaving their previous occupations. The farm's origins trace back to the planting of its first vineyard at Bajta, alongside the outdoor pig livestock farm and the "osmica," a typical Carsic farmhouse tavern.

Following their children's graduation from the agricultural technical institute in Cividale in 1998, Andrej and Nevo played vital roles in expanding the company's horizons into viticulture, salami production, and agritourism. Operating within the realms of viticulture, livestock farming, and agritourism, Bajta's focus remains on crafting traditional local products that derive their distinctiveness of the unique Carsic environment.

BUSINESS PHILOSOPHY

Our core philosophy is the care we put into the entire production process, achieving a harmonious balance between craftsmanship, local traditions, customs, and modern technology. Keeping pace with scientific advancements while maintaining a deep respect for our nature, ensuring the consistent production of wines that are up to modern standards. High-quality raw materials play a pivotal role in crafting exceptional products.

VITICULTURE

Viticulture in the Trieste Karst region boasts a centuries-old tradition, which our company upholds while infusing a modern approach. The region's characteristic terroir features a delicate layer of red soil overlying the underground mineral rich limestone. We exclusively source grapes from indigenous grape varieties, a commitment we hold dear to preserve local biodiversity.

Our production ethos embraces bio-sustainability, emphasising organic practices like the use of manure for fertilisation, employing mechanical methods for soil and weed management, and adopting manual green pruning techniques. The focus on semi-organic principles, underscores our dedication to environmentally conscious farming practices. The rich biodiversity of our region and the favourable climatic conditions such as the typical Bora wind give birth to our unique sustainable products.

We handpick all grapes to ensure quality, and our winemaking approach aims for wines that are distinctive, varietal, fresh, refined, aromatic, and enduring. Through collaboration with the oenological university of Conegliano, we employ a dual reasoned ripening process across all grapes, resulting in wines with enhanced character and depth.

THE UNUSUAL PIG- L'INSOLITO MAIALE

Our pigs are a hybrid breed of the common Large White and the Slovenian Belted pig, known as the Krsko Polsky. Animal reproduction occurs solely through natural mating, a method that minimises stress and aligns with the animals' natural life cycle, promoting seamless integration with their environment. These practices give our meat a unique natural taste. All of our cuts undergo ageing in the company's cellars, which are carved into the mineral rich Carsic rock. Since the necessary moulds for curing have always been present in our cellars, mould is achieved through the traditional self-inoculation method. This approach to breeding, production, and ageing is best summed up in the name of our butcher section, "The Unusual Pig"-"l'insolito maiale"

VITOVSKA MAJNIK

The name "Majnik", which in Slovenian means related to the month of May, comes from the fact that the aroma of the wine are as delicate as the mornings of May in Karst region, when the plants with yellow and white flowers are blooming and their scent flutters in the air, incredibly gentle, pleasant, ellegant and unique.

The grapes are harvested by hand, de-steamed and pressed. The fermentation the clear the must is taking place in stainless steel tanks where the wine is furtherrefined. The bootling is performed in summer. Strqw yellow colr, delicate, floral hints with notes of ripe pear tipical of the wine. The flavor is fresh, delicate, aromatic and mellow.

MALVASIA ISTRIANA

The grapes are harvested by hand, de-stemmed and pressed. The fermentation of the clear must is taking place in stainless steel tankswhere the wine refined. Bottle performed in next summer. Straw yellow color with greenish reflections, charatteristic scent of the wine variety, floral. The flavor is intense, resh, decisive, dry, aromatic.

TERRANO DIRASPATO A MANO

The grapes are harvested and destemmed only manually in order to obtain a mass of whole berries.This allows an immediate intercellular fermentation that enchances the primary aromas typical of Refosco (Terrano)grape variety. The traditional maceration lasts one week. The pressing is performed at the end of this process and juice/wine is transferred into stainless steel tanks, where the fermentation is brought till the end. The refinement takes places in wooden barrels where the wine remains until bottling.

Bright red color with violet reflexes, strong aroma of red berries fruits wiyh notes reminescent of ripe grapes. The flavor is intense, dry with a delicate acid vein, a typical charatteristic of this vine variety.

ROZA

The idea of this wine was born on a  very hot sunny day, thanks to its special freshness, which allows it to be an excellent thirst- quenching wine in Summer.

The grapes are harvested by hand and full bunches are directly pressed, without destemming. The fermentation of the clear must is taking place in stainless steel tanks where the wine is further refined until spring when performed bottling.Charatteristic rosè color with violet reflexes typical of the vine. The fragrance is delicate with typical note of redberry fruit and cherry. The taste is fresh, elegant, delicate and clean.

MEDITERANEO

The wine comes from the company's desire to develop a traditional method sparkling wine made out of 100% Malvasia Istriana grapes, a typical variety from the region, which has naturally great potential and characteristic for sparkling expression. 

The grapes are harvested by hand and full bunches are directly pressed without destemming. The fermentation of the clear mustis taking place in stainless steel tanks. The refinement takes place in wooden barrels until sring when secondary fermentation start in bottles. The riepening in the bottles continues for at least 36 months. The colr is clear with greenish reflections,he floral scent blends with intense aromas of Mediterranean herbs. On the palateit is fresh, elegant and claen.

TERRAROZA

The name "Terraroza" (we read Terrarosa) is  a word-play that involves several words: Terrano(intense red wine from the Karst region, strongly linked to the territory and to the unique Karsic red soil), Terra( the italian word of soil) and Rosa (The Italian word for pink color, which is actually the color of this wine).

The grapes are harvested by hand and pressed. The fermentation of the clear must is taking place in stainless steel tanks where the wine is further refined until spring when secondary fermentation start in bottles. The aging in bottles lasts at least 36 months. The colr is soft pink due to the richness in anthocianins which is a typical note of Refosco vine variety, tyhe scent reminds of strqwberries and redberry fruit. In the mouth is it dry, strong, aromatic with a velvety and eveloping perlage.
