About Winery and Wines
In 2002 we started to recover this wonderful valley, we planted the vineyards, restored the ancient mills of the '700 and give life and energy again to this forgotten place. The vineyards, 3.3 hectares, located on the hills at 90 to 120 meters above sea level, follow the natural trend of the slope of the land, riding on a hill, and are oriented north-south, optimizing the light of the sun.
We consider our work as a small contribution to a great natural design, therefore, before starting anything we listen to nature, we follow its times and try to move in its rhythms. We do not force the vines, we let them feed themselves, use their roots to search for water and nutrients. This is done so that the grapes are really produced only by the vines, and they can express the essence of the territory.
We limit ourselves only to favoring the natural energies, we do not add anything extraneous, we try to obtain the most sincere and intact wine from the place and the vines.
We do all this without demanding anything more than what nature can offer, which is really a lot.
The red vines, classic of the Bolgheri DOC, are mostly Cabernet Sauvignon and Merlot, Petit Verdot and Syrah, but also Sangiovese, Ciliegiolo and Pugnitello. The white vines are Vermentino, Manzoni Bianco and Viognier.
The vines, raised with spurred cordon, guyot and sapling, are grown in a natural way, with the organic certification of Icea, and biodynamic of Demeter, without chemical fertilizers, without the use of systemic products, favoring the fertilization of the land with the practice of green manure and with symbiosis with mycorrhizae. The vines are grown without organic fertilizers, leaving the task of finding the resources to them, in order to grow autonomously, producing grapes that are authentic expression of the territory. The fermentation is done using only the indigenous yeasts of the vineyard. The wine is aged in cement and terracotta containers and in oak barrels of 10 and 23 hectoliters.
The low yield per hectare (50 quintals), the selection of the grapes and the naturalness of the vinifications without adding chemical additives, express and enhance the uniqueness of the Bolgheri’s terroir in the wine.
5 wines are produced at the end: A little higher than the sea (Bolgheri Vermentino), On the edge of the forest (Bolgheri Rosato), Soloterra (IGT Costa Toscana) as our pure Sangiovese, On the edge of the forest (Bolgheri Rosso), Mulini di Segalari (Bolgheri Superiore) and our extra virgin olive oil.
