FATTORIA AL DOTTO founded in 1863 and currently run by the sixth generation of winemakers, is composed of the union of three ancient farms: Salanetti, Panatta and Al Dotto and extends over an area of 25 hectares located on slight reliefs that constituted the shores of a lake from the Paleolithic era at an average height of 150 meters above sea level.
In addition to the vineyards, olive trees, corn and in the flattest part the famous cannellini beans are grown.
The vineyards are located on the gentle slopes that surround the company center, with a splendid exposure to the South-South West. The proximity of the Serchio river, the influence of the Sirocco winds from Livorno and the summer Mistral, form a particular micro climate that guarantees the grapes a good maturation to the advantage of the organoleptic characteristics of the wine.
In choosing the vines, we wanted to maintain the ancient family winemaking tradition by ensuring the presence of S. Giovese, Ciliegiolo, Canaiolo and Trebbiano toscano bianco, combining them however with other varietal groups such as Merlot, Petit Vierdot, Cabernet Sauvignon for the reds and Semillon and Vermentino for the whites.
The low production of grapes per hectare, scrupulous attention in the various processing phases, a selective harvest, and a controlled vinification followed by aging in French oak barriques, allow us to obtain structured and elegant wines.

Red wines
Sangiovese
Pure Sangiovese with a beautiful ruby red color with purple reflections. Delicate aroma reminiscent of violet, broom, with a note of plum.
Dry flavor, slightly tannic, tasty, with good alcohol content and persistent taste-olfactory persistence.
The best pairings include a wide range of meats, such as fillets with garlic and parsley, cibreo of giblets, deboned rabbit on the grill, livers with bay leaves and steaks. It is recommended to uncork at least 2 hours before consumption and bring to a temperature between 18-20 degrees.
Merlot
A pure Merlot with a beautiful intense ruby red color, a characteristic bouquet with vegetal aromas of red fruit and flowers. A dry, happily balanced flavor, with pleasant tannins and an important persistence of taste. It is recommended to pair it with tasty, flavored and juicy meats, roasted porcini mushroom caps and medium-mature cheeses. It is recommended to uncork at least 2 hours before consumption and bring to a temperature between 18-20 degrees.
Rùbeo
A wine with an intense color, rich in polyphenols, Rùbeo presents inebriating aromas of flowers such as violets, small berries and black pepper. The flavor is dry, warm, soft and pleasantly tannic. it is enhanced with substantial and tasty first courses, white and red meats, game, grilled meats and short-aged cheeses. It is recommended to uncork at least 2 hours before drinking and bring to a temperature between 18-20 degrees.
Brunotto
A careful selection of Sangiovese, Cabernet Sauvignon, Merlot, Petit Verdot grapes. Brunotto has a ruby red color, an intense and rich aroma with clear hints of fruit, including dried fruit, a warm, soft, dry, persistent and harmonious flavor. Drunk at a temperature of 18 ° it pairs harmoniously with grilled red meats, roasts, game and mature cheeses.
Carillus
A wine of extraordinary elegance and finesse born from the union of the most noble vines grown in the company's vineyards. Correct management of the greenery and careful winemaking technique give rise to this wine with a ruby garnet red color. On the nose it is intense, complex and elegant. Fruity hints of small black fruits integrated with spicy notes of licorice and cinnamon with pleasant nuances of leather. On the palate you can feel pleasant round and soft tannins. It pairs harmoniously with substantial and tasty first courses, flavored and juicy grilled meats, medium-aged cheeses. It is recommended to uncork at least 2 hours before consumption and bring to a temperature between 18-20 degrees.
White wines
Redotto
A careful selection of 95% Vermentìno and 5% Semillon grapes, Redotto has a straw yellow color, an intense and persistent aroma with fruity and floral sensations; a dry, "warm", soft, full-bodied and fresh, balanced flavor, with hints of exotic fruit such as avocado, banana and pineapple.
Drunk at a temperature of 10°/12° it pairs harmoniously with fish dishes, white meats and even mature cheeses.
Vermentino di Toscana
From Vermentino grapes with carefully controlled fermentation, this wine is born with a beautiful greenish color with hints of yellowish reflections. On the nose it is delicately harmonious with refined hints of flowers (broom), fruit (white peach) and anise. In the mouth it gives a pleasant impression of depth and softness. It is enhanced when paired with dishes with good spiciness and aroma (Genoese pesto, stuffed vegetables) as well as with foods with a tendency to acidity (fresh cheeses) and tasty fish dishes. Serve at a temperature no higher than 10°.
Rosé wine
Rosapenna
Rosapenna is a wine of unique pleasantness. The brief maceration of the grapes gives it a pale pink color. On the nose it recalls cherry with notes of raspberry, blackberry and strawberry, with a vein of oak balsams. In the mouth it reveals itself enveloping soft with the right tannicity. Excellent taste harmony. Very versatile wine, excellent as an aperitif, it pairs well with appetizers, fish soups, all pasta dishes, white meats and cured meats.
