The preparation of the Castell Miquel red wines, such as the premium Cabernet Sauvignon "Stairway To Heaven", requires an exclusive environment. Therefore, they are fermented in special red wine mash tanks, some of which are furnished with a special oak sheathing. Through this early contact with the oak, the red wine mash develops very intense flavors. After fermentation the red wine is filled in oak barrels (225 liters) made of Hungarian and French oak for aging. This is where the malolactic fermentation takes place. Castell Miquel ensures that the barrels have different layouts so that the flavor of the wood is only incidental and does no overwhelm the fruit. After twelve months of storage in oak barrels, the wine is bottled without the use of sharp filtration
