Fabbrica is a new winery in Pienza. 35 hectares of vineyard, all organic in the beautiful Val d’Orcia, not far from Monte Amiata in Southern Toscana.
The mainly limestone/clay soils are planted for the most part with Sangiovese, but there is also Syrah (Cortona is nearby) and a disruptive mosaic of white international grapes just to challenge a little the emerging area.
In 2020, new winemaker Tim Manning took over and brought his experience and personal vision. This a new chapter for Fabbrica Pienza.
A purist of Sangiovese and a follower of a minimalist approach, influenced by great estates such as Domaine Dujac in Burgundy and Cristom in Oregon, he has become known for his signature micro-vinifications in open bins, using whole bunches and manual pigeages,
From his experiences in Oregon, New Zealand and Tuscany, he favours long and slow macerations with indigenous yeasts, a low use of sulfur and aging in cement vats, large oak tanks & barrels.
Not by coincidence the first wines to come out bearing Manning’s signature perfectly embody the new ideals at Fabbrica. The result is an ad hoc, natural and essential vinification; a will to experiment, have fun, work naturally, and compose unique expressions of the territory’s signature varietals.
Nothing new in itself, but a return to artisanal fundamentals for a rare and unique expression in Val d'Orcia.
We focus on autochton varietals, with 3 different wines that are 100% Sangiovese : POPNAT, NEWTON Rosso and TINIA.
Along these wines, we have 2 whites. NEWTON Bianco that is Vermentino & Viognier and MENRVA, made of Roussanne & Marsanne.
To complete the range, we could resist to challenge ourselves with Syrah, as Cortona is a few miles away from us.
