Bodegas Augusta Bilbilis is situated in the small town of Mara, in the Comarca de Calatayud, Zaragoza. It produces around 30,000 kilos per year using gravity to move grapes and wine. Temperature, ranging form 14ºC to 17ºC throughout the year is also controlled through natural methods, as part of the cellar is underground and energy use is minimized. Facilities are cleaned using only high pressure water at various temperatures in order to avoid the use of detergents. ENAC certificate according to norm ISO 45011 for the making, vintage and storage of red wine. Grapes are grown under strict conditions of respect for the land using artisinal methods and avoiding the use of chemicals. Grapes are collected at the optimum stage of ripening.

Bodegas Augusta Bilbilis spans over 10 hectares of vineyards with approximately 18,000 stocks, entirely of garnacha. The age of these stocks ranges from 45 to 100 years growing on steep mountainsides at an altitudes of between 750m and 1000m. The ground is poor and barely fertile, mainly rocky mostly with clay and slate. The climate is typically very cold in winter and extremely hot in summer, with vast thermic variations from day to night which ideally allows for slow ripening of grapes high in anthocyanins. Scarce rainfall averaging 350mm/year allows for chemical-free crops. Weed control is rigorously mechanical and no weed-killers are used. Grapes are hand-picked and sorted at the vineyard for fast transport to the winery to ensure careful handling.
