Paniza harvests around 15 million kilos of grapes a year in two month, and has storage capacity for 15 million litres in stainless steel tanks and oak barrels. In recent years the winery has undergone an extensive upgrade, and is now fitted with cutting-edge technology which can achieve and maintain a high level of excellence. Fermentation and stabilisation take place at controlled temperature (whites at 14-16ºC and reds at 26-28ºC). The form of storage and degree of ageing differ, depending on the wines that are going to be the end product. The young wines, whites, rosés and reds are stored in stainless steel tanks, whilst the Crianzas, Reservas and Grandes Reservas are placed in our cool cellars, cut from the rock and accommodating 13,000 French and American oak barrels. The winery is certified to BRC (Grade A) and IFS Food (Higher Level) standards. Our winery's recent modernization was undertaken to bring its image into line with the firm's core values: modernity, innovation and research.

The vineyards of Paniza Wineries occupy some 2,500 hectares. They are located in the south, in a privileged area in the footjhills of the Sistema Ibérico. These are the highest vineyards in the area, at 850 metres above sea level, bringing very cool temperatures in summer. This, along with our dry continental climate, helps to create important temperature differences throughout the day, all year round. The soils and subsoils are poor in organic content, comprising limes and clays with good structure and aeration. The soil surface is characterised by limestones and the subsoil is made up of limestone, sand and clay. The slopes of the Iberian System of mountain ranges are characterised by soils and subsoils of slate with good drainage, favouring a balance between vegetation and production, which is the key to obtaining highly expressive wines with complex characteristics and minerals. This terroir provides interesting conditions for the production of wines of the highest quality and excellence.The result of all these factors is wines with an excellent concentration of colour, sugars, flavour and aromas. Our vineyards are located in the region that gives its name to the Denomination of Origin Cariñena, which brings together a series of conditions, such as the quality of the soil and the particular characteristics of the climate, which are especially favourable for successful wine production.
