When it is time to harvest we control the process of maduration strictly and plot by plot with analytical methods. All grapes are harvested by hand using boxes of 15 kilo. The must of each plot ferments separately using only the yeasts of the grapes. Afterwards, we decide on their destiny: Estate wines: Yotuel Roble, Yotuel Selección Single vineyard wines: Valdepalacios, San Miguel, La Nava. Each wine ages in oak barrels, partly new, 90% French oak and 10% American oak.
