About Winery and Wines
The Project was created to transmit the wine heritage, culture of a privileged region like Quixote Land is. We practice sustainable viticulture, minimally interventionist, which allows our clay-calcareous soils to expressing themselves fully. The best raw material must be used to highlight the nature of our variety, our distinguishing element. Our aim is to obtain wines that transmit the good work of our people in the vineyard. With limited productions, we prioritize quality to quantity. We use organic fertilizers, a good control of the leaf mass and various pruning when it is still green. With all this, we obtain wines with great personality, taking the maximum amount of qualities given by our privileged land. Afterwards in the winery, we elaborate in small, cubic deposits of cement (9.000 l., 12.000 l., and 15.000 l.) In these deposits is where magic takes place to create the drink of the gods. More than 10 meters deep, the marriage between wood and wine takes place. With the purpose of transferring the most elegant tannins and aroma to our wine, we only use French oak barrels, choosing carefully the forest of origin.
