Great introduction, and professional explanation about vification processes.

Finally a nice wine tasting made of 5 glasses.
Only a small remark, maybe some bread or crackers in berween the wine tasting glasses would improve even more.
But all was great!

About Winery and Wines

Founded in 1930 by Michel Fabre, Domaine Tour Saint Michel is a family-owned winery nestled in the sunniest and warmest part of the Châteauneuf-du-Pape appellation, in the southern Rhône Valley. The estate began with a few vineyard plots and expanded steadily over generations. Henri Fabre, Michel's son, grew the estate with the support of his wife, Eliane. Since 2007, their daughter Mireille has been at the helm, blending family tradition with a modern touch. In recent years, the next generation has joined the venture: Magali in 2018 and Mélanie in 2023.

Today, the estate cultivates 55 hectares of vineyards, 30 of which are within the prestigious Châteauneuf-du-Pape appellation. The vineyards are located on renowned terroirs such as Les Gallimardes, Crouscroute, Les Petites Serres, and Le Grand Coulet, known for their rolled pebbles that absorb and radiate heat, contributing to optimal grape ripening.

Domaine Tour Saint Michel is committed to environmentally responsible viticulture. Certified Haute Valeur Environnementale (HVE) Level 3, the estate has eliminated the use of chemical herbicides, opting instead for traditional soil work using ploughs and other mechanical tools. This sustainable approach aims to maintain soil health, vine vitality, and ultimately, the quality of the grapes.

In 2020, the estate began converting to organic farming, with full organic certification achieved as of the 2023 vintage. This transition also accompanies the acquisition of new plots in cooler northern areas of the appellation, including Terres Blanches, Les Brusquières, and Fargueirol.

Visitors are warmly welcomed at the Domaine to discover the family’s passion and dedication firsthand.

Domaine Tour Saint Michel produces expressive wines that reflect the richness of the Châteauneuf-du-Pape terroir and the character of its grape varieties. Of the 13 grape varieties authorized in the appellation, the estate focuses on 7 key ones.

For red wines, the estate uses:

Grenache: Known for its opulence and roundness
Syrah: Brings elegance and structure
Mourvèdre: Adds warmth and depth
Cinsault: Delicate and light, offering finesse

For white wines, the varieties include:
Grenache Blanc: Traditional and full-bodied
Roussanne: Aromatic and rich
Clairette: A fresh, Mediterranean touch

Vinification at Domaine Tour Saint Michel is a crucial step where the wines are carefully shaped to reflect the strengths of the terroir and grape varieties. The cellar includes both stainless steel and concrete vats, designed for optimal temperature control. Only a small portion of the wines are aged in oak barrels, as the emphasis is on expressing the purity of the grape, the land, and the vintage rather than wood influence.

The winemaking process is driven by precision and patience. The result is a collection of wines that are true to their origin. balanced, vibrant, and deeply connected to the land they come from.
