About Winery and Wines

Organic farmers cultivate the land without burdening nature, respecting the environment using biological principles. They believe in biodiversity and try to avoid the use of chemicals (pesticides, herbicides, fertilizers) using instead plant- and mineral- based products to enhance the health of soils, the immunity and growth of plants and the quality of products. Natural winegrowers, much alike to organic farmers, are non- interventionists, use mainly traditional, gentle methods of production, believe that it is better to let nature take its course. When it comes to wine, natural winemakers use wild yeasts, use small or no doses of sulphur, mature the wine on fine lees, use as little rackings and filtration as possible. The final goal is to produce a living wine that has its own personality and evolves over time.
