How many wonderful things can I saw...

How many wonderful things can I saw about Valdonica?

My husband and I slept comfortably in wonderfully plush blankets and pillows. Valdonica loves local and green- the walls are made of recycled wine barrels, all their foods and products are bought from local sellers, and everything is solar powered. Because we visited during the off season, we stayed in one of the rooms of the main building (as opposed to the villas closer to the vineyards) and were the only ones there for the 2 nights we stayed. The main building houses the manager's office, kitchen, and winery in addition to the rooms.

A wonderful man whose company my husband and I enjoyed very much during our stay! He is not just helpful and informative, we felt like we made a new friend (story-telling + tours + wine = new best friend, pretty much). We learned a lot about the winery, the local villages and nearby restaurants from him as well.

Free breakfast was delicious. I especially enjoyed the different jams and honey they make at Valdonica (they sell these there as well). Bathrooms include hair dryer, shampoo, body wash, soap, bathrobe, bath slippers, towels. I will note that the free wifi worked best in the kitchen/dining area and not as well in the bedroom but who needs wifi in the bedroom during your honeymoon....amiright?

We hiked the trail that they have set out and enjoyed every minute of it. The view is breathtaking. Their vineyard produces some amazin

We had a great experience staying at Valdonica this past July. We were there for two nights - one of which included dinner with Martin, the owner. This was the highlight of our stay! The food and wine were fabulous and Martin is a very gracious host. If I had to provide any constructive criticism, I would say that wifi really only works in the common area, and the shelf in the bathroom was really too small to use effectively - really neither were any kind of major issue for us. We stayed in the main building, not in the villa rooms.

About Winery and Wines

The heart of Valdonica are the vineyards, which we planted into pure mother nature – all soil here is untouched and virginal. The buildings in Valdonica are integrating traditional Tuscan architecture, modern design, the comfort of Italian “Dolce Vita” and leading edge ecological technology.

In 2008 we produced our first wines: 5 wines, 5 characters and temperaments, 5 expressions of Valdonica. From the vineyards to the bottle – we follow the flow of nature: Our wines ferment in small batches through yeast from Valdonica´s land, they mature in barriques or stainless steal and rest in the bottle from 12 to 24 months. Since then we have been growing in what we do and the wines have been growing – knowing that the perfect wine might be found in another universe!

The uniqueness of Valdonica lies in the interplay of high altitude vineyards (up to 500 meters), the microclimate of the Mediterranean Sea, the volcanic soil and the spirit of our team – it all reflects in the “spiciness” of our wines!

We in Valdonica work with greatest respect, gratefulness and joy for nature – to achieve with a minimum of human intervention a maximum of nature. This is reflected in the organic certification for our wines.

Beds made from the wood of 400 years old wine-barrels – hand made with modern design: We found old wine-barrels – taller than humans, thicker than today´s barres: Over centuries their wood got infiltrated by wine and its crystallisation. Integrated into the finest carpenter-work you sense the touch of artisan work and spirit of wine.
