At Fongoli Winery, we have chosen not to produce for the masses, but for those who truly appreciate a philosophy rooted in craftsmanship, authenticity, and the rediscovery of tradition.

Now in its fifth generation, our family-run estate is a proud guardian of time-honored values. Our commitment to the land is reflected in our use of biodynamic farming techniques, which allow us to preserve the soil’s vitality and promote a healthier agricultural ecosystem. Our goal is to create pure, genuine products that embody the essence of our terroir.

Our historic cellar, home to impressive 60-year-old Slavonian oak barrels, tells the story of our evolution. Visitors can also explore our private museum, which features an extraordinary collection of bottles dating from the 1950s to the present.

Fongoli stretches across 33 hectares of contiguous land where vineyards, olive groves, arable fields, woods, meadows, and even a natural truffle ground coexist in harmony. In addition to wine, we produce artisan pasta, extra virgin olive oil, and honey, all following the same commitment to natural processes.

We only produce cru wines, each from a specific part of our vineyard. Everything is harvested by hand, and we’re fortunate that our land is located close to the winery, so we don’t need to use any preservation methods during transport.

Harvest begins at the first light of morning, and because the grapes arrive at the cellar still cold, fermentation starts at its best. We use spontaneous fermentation with indigenous yeasts, fermenting in open vats made of concrete, amphorae, large barrels, and sometimes stainless steel.

We are certified organic and never use chemicals. In most of our wines, we do not add sulphites.

We work with indigenous grapes, including Sagrantino and Trebbiano Spoletino, as well as other local varieties like Grechetto for whites, and Sangiovese and Montepulciano for reds.

Our two historical vineyards, Palmetta and Doppio Palco, planted in the 1970s, are among the last in the area. We also have mixed vineyards from the 1980s, and the remaining plots were planted in the early 2000s.

The most important reds are aged in our historical cellar, where we store them in 60+ year-old Slavonian oak barrels.
