About Winery and Wines
We are currently the fifth generation of winemakers in our family, and the fourth generation to make wine at these facilities. We are a family winery that produces artisanal wines with heart. The evolution of these five generations can be summed up in one word that gives meaning to this story: CESAR. The first stone that started the foundation for this passion for the vineyard and its transformation of grapes into wine was laid by Cesar Delgado in 1908 in Socuéllamos, Spain. The facilities remained there until 1930, when the following generations began making wine in new facilities on Calle Campo de Criptana, just 150 meters from the first ones in the same town, due to the expansion of the company. Every generation has had a Cesar, just like today.
- Family origins: The winery began as a home production for personal consumption, evolving into high-quality bottled wines under the official name Bodegas Delgado Collado S.L. , founded in 2015 by Cesar Delgado Cuevas and Maria Francisca Collado.
- Current leadership: Rubén Delgado Collado, third generation and trained economist, has led the project since 2015, applying his management knowledge to the world of wine.
- Controlled expansion: Annual production of approximately 17,000 bottles, maintaining an artisanal and sustainable approach.
Awards and recognitions:
- Silver Medal at CINVE 2019 for its Viñas del Cerro Tempranillo 2018.
- Notable mentions in specialized media such as Nos Vamos de Vinos (2024) and Wine Up!.
- “Young Farmer of the Year” Award (2017), awarded by the Socuéllamos City Council.

Viñas del Cerro Airén
Century-old vineyard. Floral notes and green apple. Night harvest, cold fermentation, and aging on lees.
Viñas del Cerro Chardonnay
Tropical notes of pineapple and mango. Fresh, well-balanced, and clean wine. Aged on lees.
DCésar Brut
Sparkling wine made using traditional methods, aged for 9 months in a cave. Fine bubbles, medium body. Ideal for celebrations.
Viñas del Cerro Rosado
Pale salmon color, floral aroma and red fruits. Macerated for 16 hours. Fresh, balanced and easy to drink wine.
Viñas del Cerro Tempranillo
Cherry red color, aromas of redcurrants. Expressive, meaty, and persistent wine. Night harvest and controlled fermentation.
Viñas del Cerro Cencibel
Expressive wine with aromas of black fruits. Meaty, full-bodied, and long finish. Night harvest and artisanal production.
Viñas del Cerro Syrah
Intense color, aromas of blackberry, pepper, and violet. Medium-high body, soft tannins. Structured wine, ideal for red meats.
Viñas del Cerro Merlot
Ruby color, notes of cherry, plum, and spices. Soft tannins, round body. Ideal for pairing with meats and cheeses.
DCésar Tempranillo (Long Maceration)
Intense color, aromas of red fruits and licorice. Long maceration that adds body and complexity. Structured
and persistent wine.
Daganzo
Late harvest. Partially aged in French and American oak barrels. Complex, balanced wine with great aging potential.
Production techniques
- Manual harvest and immediate cooling of the grapes.
- Fermentation in temperature-controlled stainless steel tanks.
- Gentle pressing in a manual vertical press.
- Minimal intervention to preserve the authenticity of the variety and the soil.
