Nestled in the heart of Villarrobledo, Pago de La Jaraba is a hidden gem that seamlessly blends history, tradition, and innovation. Our estate, steeped in centuries of agricultural heritage, has seen the footprints of Iberians, Romans, Visigoths, and Arabs, who each left their mark on this fertile land. The name "La Jaraba" was given by the Arabs and later embraced by the Kingdom of Castile, reflecting the rich cultural tapestry of the region.
Today, Pago de La Jaraba offers a unique and immersive experience for visitors through a combination of Enotourism, Oleotourism, and "Lactealtourism." This singular tour allows guests to explore the intricate processes behind our three flagship products: fine wines, artisanal Manchego cheese, and premium extra virgin olive oil. The estate is a sanctuary of serenity, where the quiet atmosphere and lush green surroundings provide the perfect backdrop for discovering the secrets of our craft. Visitors can choose to be guided by one of our experienced oenologists or our master cheesemaker, ensuring a deeply personalized experience.
At Pago de La Jaraba, our winemaking philosophy is rooted in a commitment to quality and respect for tradition. We begin with hand-harvested, over-mature grapes, ensuring that each berry is treated with the utmost care. The journey from vine to bottle is managed with precision, utilizing advanced technology to minimize stress on the grapes and preserve their natural qualities. We employ innovative techniques such as vibration hoppers and OVIS systems to gently handle the harvest, avoiding damage to the fruit and ensuring the highest standards of hygiene and quality.
Once the initial process is complete, the wine begins its transformation in our maturing warehouse, where tradition takes over. The wine evolves in French oak barrels and epoxidic resin-lined concrete tanks, undergoing malolactic fermentation and careful blending until it reaches its full potential. Our portfolio includes three distinct ranges: AZAGADOR, VIÑA JARABA, and PAGO DE LA JARABA. These collections feature blended red wines made from Tempranillo, Cabernet Sauvignon, and Merlot, as well as monovarietal white wines crafted from Sauvignon Blanc and Chardonnay. Each bottle is a testament to the unique character and exceptional quality that define our estate.
