Originally part of the manor house, these galleries were carefully restored under the direction of François Lurton and the Rolland family, transforming them into an underground cellar. This unique space, with its naturally cool temperature of around 12°C, offers an ideal environment for the slow and balanced maturation of their wines, even when the outside temperatures soar above 40°C.
In addition to the historic galleries, a modern building was constructed opposite the manor house to receive and press the grapes. The underground cellar houses not only barrels and foudres but also ovoid concrete tanks, all contributing to the distinct character of Campo Elíseo's wines.
