We had the most fantastic wine tasting experience. It was so authentic and with very nice wine. So much so that we shall be ordering it to England and telling all of our friends about it. Highly recommended.

Cantina e Vini

We are Adriano and Giuseppe Todaro, producers and winegrowers at Todaro Winery, located in San Giuseppe Jato, in the province of Palermo. Since 2018, our winery has been distinguished by two production lines: "Todaro", dedicated to organic wine production, and "Feotto", focused on producing natural wine in terracotta amphorae. Both lines reflect our life philosophy and commitment to naturalness, using organic farming techniques and natural winemaking processes, without the addition of chemicals. We respect the environment and local traditions, enhancing every aspect of the territory.

Natural Wine:
My wines, "Il Bianco" and "Il Rosso," are produced using traditional methods without the addition of chemicals. "Il Bianco" is harvested in crates of no more than 15 kg, gently pressed, and fermented in steel silos for about 15 days with skin maceration. After fermentation, it rests for 6 months before being bottled without sulphites and unfiltered. "Il Rosso" follows a similar process but after fermentation, it rests in 300-liter terracotta amphorae, which add mineral notes to the wine. It is also bottled without sulphites and unfiltered. Both wines reflect an approach that values tradition and the authenticity of ancient processes.

Producing natural wine is challenging due to the meticulous attention required at every step of the process. The complexity involved in ensuring the wine develops its unique characteristics without any chemical additives makes each bottle distinct and a true representation of the terroir. This complexity not only adds to the uniqueness of each wine but also underscores the skill and dedication required to produce such authentic and traditional wines.
