The Pascale family has historically used the farm in Fosdinovo since 1992 to supply extra virgin olive oil for self-support, relatives and friends. Subsequently, Francesca, the daughter of the head of the family Gerardo, launches the idea of ​​expanding production by embracing the world of wine. The beauty of the hills of Fosdinovo, the call of nature, therefore combines with the desire to enhance the land beneath the olive grove and give an impetus to the nascent local agriculture. The Pascale Francesca Agricultural Company has stood out as organic since its inception: it does not afflict or even apply chemical "boosts" to the normal cycle of nature.
From 2008 to 2009 the land was prepared. In 2010, Vermentino was planted, followed by Vermentino Nero, Canaiolo and Merlot.

For us, work in the vineyard is very important. Our wine has always been organic, like our Evo Oil. Francesca and Gerardo's idea is to start from the extreme healthiness of the product to create in the cellar what is done in the countryside. The grapes arrive healthy and are manually selected for a non-invasive oenological treatment with the addition of a minimum quantity of sulfur dioxide only after fermentation. Pressed without the use of mechanical pumps and fermented at a controlled temperature, the grapes age for a period on their own lees.
