The current management dates to 1998 after the death of the founders, Ezio Scienza and his wife Giuseppina. Since our first years of viticulture and winemaking, here at VALLAROM we have always been experimenters both in the vineyard and in the cellar, even when the vineyard management techniques were primarily conventional. When I took over from my grandparents, after attending San Michele all’Adige Agricultural Institute and important work experiences in Burgundy (France), Tuscany (Italy), Germany, and the USA, I realized that we had to return to a style of viticulture that was more respectful of the environment in which we live, without the use of invasive chemicals, in order to obtain a product that is more “real,” a true child of the environment and of the terroir, of my hands and of the seasons.As a result, I saw the need to change the products we used and our systems of defense against the principal vineyard diseases and to seek a more natural equilibrium with the land; we cannot forget that “wine is made in the vineyard.”
