Sanctum Gourmet Wine & Gastronomy Experience

Upon arrival at Sanctum Winery, you will be warmly welcomed by the owner, Mr. Marko Podkubovšek, who will introduce you to the unique world of Sanctum. The experience begins with a brief journey through the history of Sanctum wines, exploring the legacy of the Carthusians, the winery’s philosophy, and the vineyards that shape its distinctive identity.

The visit continues with a guided tasting and presentation of Sanctum’s wines, which mature in wooden barrels and are internationally recognized for their quality and elegance. The tasting is thoughtfully structured with food pairings that enhance each wine’s character. White wines are accompanied by refined cold finger-food tapas featuring salmon, cod, capers, and fresh goat cheese. The red wines are paired with organic fresh goat cheese, prosciutto, 12-month aged Parmigiano Reggiano, venison salami from Rogla, and a traditional Beef Bourguignon prepared according to Julia Child’s recipe, slow-cooked with Sanctum’s My Red wine.
