Organic Winery Tour & Wine Tasting at Novaia in Valpolicella Classica

Your visit to Novaia, a certified organic, family-run winery, begins in the Marano Valley, in the heart of the Valpolicella Classica area.

A member of the Vaona family or their hospitality team will greet you and lead you into one of the estate's organic vineyards. Here, you'll learn about the local terroir, the principles of organic viticulture, and Valpolicella’s native grape varieties. The walk continues with an explanation of the grape selection, harvesting, and processing methods.

The tour then moves to Corte Vaona, the historic winery, where you will explore the ancient, stone-carved barrel cellar where the wines mature.

Following the tour, your host will guide you through a tasting of six organic wines. You will sample a range that showcases the territory, including a Valpolicella Classico DOC, a Valpolicella Ripasso DOC, a Valpolicella Superiore DOC, an Amarone della Valpolicella DOCG, an Amarone della Valpolicella Riserva DOCG, and a Recioto della Valpolicella DOCG.

The wines are served with Novaia’s own organic extra virgin olive oil and Monte Veronese cheese. Depending on the day's organization, the tasting will take place in the vineyard, the dedicated tasting room, or the barrel-ageing cellar.
