Bajta Fattoria Carsica is a family-run farm and winery on the Carsic plateau in Trieste, Italy. Established in 1988 by Magda and Slavko, the farm operates in viticulture, livestock farming, and agritourism. The vineyards benefit from the region’s unique terroir, with red soil and limestone promoting the cultivation of indigenous grape varieties using organic and sustainable farming methods. Pigs, a hybrid of Large White and Krsko Polsky, are raised naturally, and their meat is cured in limestone cellars using traditional methods. The farm’s philosophy blends local craftsmanship with modern technology, ensuring high-quality products.

The farm’s wines are handpicked, focusing on varietal expression, freshness, and complexity. The collaboration with the enological university of Conegliano further enhances wine production, promoting innovative practices that respect nature and biodiversity. Bajta Fattoria Carsica offers an exceptional range of wines, each intricately tied to the unique terroir of the Carsic plateau. Vitovska Majnik derives its name from the delicate May blooms in the region, showcasing elegant floral notes and a fresh, aromatic character. Malvasia Istriana presents an intense, dry, and fresh profile, while Terrano Diraspato a Mano delivers vibrant red fruit flavors with a bright red hue. The Roza rosé is designed for warm, sunny days, with refreshing, light berry notes.

The Mediterraneo, a traditional method sparkling wine made from 100% Malvasia Istriana, is aged for 36 months in bottles, offering a refined blend of floral aromas and Mediterranean herbs. Terraroza, a play on words combining terra (land), Terrano (the grape), and rosa (pink), is a sparkling rosé featuring soft pink hues, reminiscent of strawberries and red berries. Bajta Fattoria Carsica's wines are a tribute to the rich biodiversity and climatic conditions of the Trieste Karst region, combining traditional winemaking with modern techniques.
