Pérez Barquero generous wines acquire the magnificent properties that distinguish them not only by the fineness of the vines, the richness of the grape and the unique climate of Andalucia, but also by a natural process of maturing. In the Bodegas, where there is a cathedral like structure, quiet and magnificence, after a careful selection, the new wine is rociado (transferred) to American oak butts.

Our vineyards are located in the most valued high quality zones of the Sierra de Montilla and Moriles Alto, where the substratum is so rich in organic remains, allows an optimal maturing of the grape and let us obtain a must of extraordinary quality. Between the Guadalquivir, Guadajoz and Genil rivers, in such a generous wine-making area as Andalucía, the soils of rich calcic carbonate -called “Albarizas”- have all the required qualities for the growing of the PEDRO XIMENEZ vines, our single varietal. The climate is hot and dry, with long summers whose temperatures often raise over 40ºC. Winter is short and cold, with minimum temperatures of 2ºC. The region enjoys a very high annual average of between 2,800 and 3,000 hours of effective sunlight. All these factors, together with the characteristics of the Pedro Ximenez (PX) grape variety, allow the extraction of musts of 14º Baumé which, after fermenting, produce wines of over 15% natural alcohol (not fortified). Sun, hot and dry environment make possible the asoleo (sunning), origin of our famous Pedro Ximénez sweet wine.
