About Winery and Wines

Cà Rovere is a family-run winery devoted to the fine art of making Spumante Metodo Classico: sparkling wine - or bollicine, as Italians like to call it, made following the Traditional Method. Their grapes grow on the limestone-rich soil of the Berici Hills, located in Northeastern Italy, near the city of Vicenza. Here, the Biasin family started its very own wine-making tradition. For 30 years, the Biasin family has been taking care of a 30 hectares estate on the Berici Hills, involving 3 generations - from grandfather Bruno with his beloved wife, to their children and grandchildren. Cà Rovere wines are the result of meticulous work in the vineyards, with minimal treatments and a rigorous selection of grapes made through a handmade harvest. Cà Rovere is part of FIVI, an independent winemakers association, a guarantee of authenticity and quality. To give a further expression of their territory, some of their Traditional Method wines include the indigenous Garganega variety. With its delicate almond aromas, carefully blended with Chardonnay, they create structured cuvées - strongly tied to the territory.

Cà Rovere's Traditional Method sparkling wine is Single Vintage - or Millesimato (from grapes harvested in a single year), and ages for at least 36 months up to 70 months of aging on the lees. Such refinement results in a high-quality sparkling wine with fragrant aromas and a persistent, tiny perlage. The Cà Rovere sparkling wines line is composed of 6 labels, which differ in blend and sugar dosage: Brut, Blanc de Blanc, Brut Nature, Brut Rosé, Demi-sec, Sisto Bianco e Sisto Rosso.
