About Winery and Wines

Cà Rovere is a family-run winery dedicated to the fine art of producing Spumante Metodo Classico, or traditional sparkling wine, known as bollicine in Italy. Nestled in the limestone-rich Berici Hills of Northeastern Italy, near Vicenza, the Biasin family has cultivated their winemaking tradition for over 30 years. The 30-hectare estate has involved three generations, starting with grandfather Bruno and continuing through his children and grandchildren. As proud members of FIVI, the independent winemakers' association, we guarantee the authenticity and quality of our wines. Our meticulous care in the vineyards, combined with minimal intervention and a hand-harvested selection of grapes, ensures that each bottle embodies the true character of our territory, including the use of the indigenous Garganega grape in some of our cuvées.

At Cà Rovere, we specialize in producing Metodo Classico sparkling wines with a deep connection to our land. Our sparkling wines are all Millesimato, made from grapes harvested in a single vintage and aged on the lees for a minimum of 36 months, with some cuvées aging up to 70 months. This long refinement process results in elegant, high-quality sparkling wines with fine, persistent perlage and fragrant aromas. Our collection includes six distinct labels, each varying in blend and sugar dosage: Brut, Blanc de Blanc, Brut Nature, Brut Rosé, Demi-sec, and Sisto Bianco e Sisto Rosso. Whether it's the delicate almond notes of Garganega blended with Chardonnay or the structured cuvées tied to our unique terroir, Cà Rovere’s sparkling wines offer an authentic taste of the Berici Hills.
