It is with pride that Ezequiel Ferret Olivella conveys to you the 50 year history of his cava cellars, a condensed history of his intense life. Year: 1941. With passion and determination, Ezequiel Ferret Olivella founds CAVAS FERRET together with his older brother José Ferret. This was the idea and legacy passed on by their father, unable to fulfil it himself as he passed away suddenly while Ezequiel was still young. Ezequiel Ferret's father dedicated himself exclusively to making wine, the base to be used in the making of cava. His efforts were rewarded by regular mentions in the press, and in 1922, the Gold Medal. At the same time, he continued studying the art of winemaking at the Estación de Viticultura y Enologia (Institute of Viticulture and Winemaking) at Vilafranca del Penedès. The original winery, founded in 1907, is still conserved nearly fully intact. Ezequiel Ferret Olivella himself followed in his father's footsteps and also studied at the same institute, between 1943 and 1944. From 1944 onward, Ezequiel Ferret never ceased in his pursuit of innovations to the field, whether new cultivation techniques or processes to improve production. The first ten years were characterised by feverish activity - an ongoing job to excavate and expand the subterranean cellars. At a depth of 15m below ground level, these were excavated manually with picks; the dirt carried out bucket by bucket. Alternating this work with the day to day care of the cava bottles themselves, the cellars gradually grew, being tiled as they went with handmade bricks that preserved the vaulted form and prevented erosion.
