Nestled in an unspoiled environment, we cultivate our vines with deep respect for the land and the living world. This commitment was recognized with the award of the High Environmental Value (HVE) certification in 2014, followed by Organic Farming Certification in 2020.

Our dedication to biodiversity promotes the natural balance of the vineyard and contributes to the richness of this unique terroir. Every decision we make is guided by a simple conviction: produce less, but produce better.

As a result, all of our wines are produced under the prestigious AOC Minervois and AOC Minervois La Livinière appellations, benchmarks of excellence among the great wines of the Languedoc region.

Located in the heart of La Livinière Cru, the first officially recognized cru of Languedoc, Château Sainte Eulalie’s vineyard extends over 40 hectares (98 acres) of south-facing hillsides, at elevations ranging from 225 to 250 metres.

Sheltered from northern winds by the Black Mountain (Montagne Noire), the vines benefit from exceptional sunshine and a microclimate ideally suited to the slow and complete ripening of the grapes.

The estate’s signature lies in its highly stony soils, rich in clay, limestone and manganese. This remarkable geological mosaic ensures excellent natural drainage while preserving essential moisture during the dry summer months. It is this unique terroir that gives our wines their distinctive personality, depth and outstanding ageing potential.

The Authentic Expression of Great Mediterranean Grape Varieties. Syrah, Grenache, Carignan and Mourvèdre form the backbone of our vineyard. The harmonious balance between old vines and younger plantings, combined with a winemaking approach that respects both fruit and terroir, reveals the finesse, complexity and character of each cuvée.

Eulalie – IGP Pays d’Oc White - 100% Sauvignon Blanc

A charming wine that perfectly balances richness and freshness. Its generous, rounded palate reveals expressive fruit aromas and vibrant acidity, combining elegance with delightful drinkability.

Printemps d’Eulalie – AOC Minervois Rosé - Syrah, Cinsault, Grenache, Mourvèdre

A refined and delicate rosé with subtle floral aromas and refreshing brightness. An invitation to convivial moments and the pleasures of summer.

Plaisir d’Eulalie – AOC Minervois - Syrah, Carignan, Grenache, Mourvèdre

Aged in concrete tanks to preserve the purity of the fruit, this wine offers generous aromas of ripe berries, a smooth and generous palate, and silky tannins.

Buona Pulcella – AOC Minervois - Syrah, Grenache, Carignan

A wine of character that combines elegance and complexity. Partial barrel ageing brings depth, refinement and remarkable length, supported by fine, well-integrated tannins.

La Cantilène – AOC Minervois La Livinière - Syrah, Carignan, Grenache

A true ambassador of the La Livinière Cru, this wine reveals delicate spicy notes, a harmonious structure and precise tannins that extend the tasting experience with elegance.

Bellezour Anima – AOC Minervois La Livinière - Old-vine Carignan, Syrah and Grenache
