About Winery and Wines

Our winery is located in the centre of the Bolognese hills in one of its most scenic corners: Montebudello. the altitude of approximately 300 metres is ideal for the production of white wines enriched by a very calcareous soil of marine origin, hence by the typical clays that make up the bottom of our gullies. Thanks to these clays we are also able to produce excellent red wines that accompany the richest dishes of Bolognese cuisine.
Our production is focused on the three DOC wines of the province of Bologna: Pignoletto DOCG, Barbera DOC, Cabernet Sauvignon DOC, Rosso Bologna DOC

 

Pignoletto

Pignoletto is a type of white wine that originates from the Emilia-Romagna region in northern Italy. It is made from the Pignoletto grape variety, also known as Grechetto Gentile. This grape variety has been cultivated in the region for centuries and is used to produce both still and sparkling wines.

Pignoletto wines are characterized by their fresh and crisp profile, often displaying notes of green apple, citrus, floral aromas, and sometimes a slightly almond-like flavor. The wines can range from bone-dry to slightly off-dry, offering a versatile range of styles to suit different preferences.

We produce Pignoletto using the re-fermented method,  similar to the classic method, but not disgorged. The wine therefore has a slight effervescence and all the richness of the yeasts used for refermentation, not removed during bottle ageing. The wine completes its re-fermentation and ageing cycle approximately one year after the grape harvest.

Barbera

The Barbera grape is known for its high acidity and versatility, making it suitable for a range of wine styles from light and fruity to more full-bodied and complex. Barbera wines often exhibit flavors of red and black fruits, such as cherry and blackberry, along with a refreshing acidity that makes them great food wines.

Barbera Colli Bolognesi wines may vary in terms of style and quality. The most of our production is aged in oak barrels, which can add layers of complexity and subtle oak flavors to the wine. But in some season we focus on steel casks for vinification with the aim to get a more vibrant and fruit-forward expression.

Cabernet Sauvignon

Cabernet Sauvignon wines from the Colli Bolognesi region display characteristics that are typical of the variety, such as dark fruit flavors (blackberry, cassis), hints of tobacco, green bell pepper, and sometimes cedar or oak-driven flavors from barrel aging. The influence of the local terroir and climate  impact the wine's profile, potentially leading to variations in flavor and structure compared to Cabernet Sauvignon wines from other regions.
