The Palazzo di Varignana estate presents its new winery: 1,100 square meters built according to the principles of semi-subterranean architecture, made from natural materials representative of the local area, such as olive wood and red brick, perfectly incorporated into the surrounding landscape. The tasting room is characterized by stylish design finishes and colors reminiscent of autumn foliage, where the view extends toward the terrace overlooking the spectacular vineyard currently being converted to organic production. As well as the native grape varieties, such as Sangiovese, Albana, Famoso, Malbo Gentile, and Pignoletto, you can find international varieties, such as Pinot Noir, Pinot Blanc, and Chardonnay. We use state-of-the-art production technologies to guarantee the protection of the authenticity and organoleptic properties of our wines. The cellar, under its imposing red brick vaults, houses the French oak barrels in which the young wines rest and refine to reach the right level of aging and become the best expression of the terroir and the vines that produced them. Among the Spumantes you’ll find bottles of Villa Amagioia on the characteristic pupitre wine racks, traditionally used for the remuage process, the last key step in preparation for the disgorgement typical of the Metodo Classico (Champagne Method). The winery and vineyards are situated in a wonderful natural amphitheater, an exceptional location that, since last July, has hosted various events related to the world of wine tourism, such as concerts and open-air cinema with tastings. The tasting room is open from Wednesday to Sunday, offering visitors a unique experience to discover our wines: Chardonnay, Spumante Metodo Classico, Pinot Noir, and Sangiovese Superiore.

Tenuta Bonzara was born from the dream of grandfather Angelo, who in 1963 bought a property of about 100 hectares in the small Village of San Chierlo, near Mount Bonzara. This is the story of how a family with a long winemaking tradition arrived in an area historically suited to viticulture. 15 hectares of vineyards were planted, the cellar was built, and the first bottles were labeled in 1967. From there, commitment and enthusiasm brought the intuition that in 1971 led to the birth of the legendary Cabernet Sauvignon Bonzarone, baptized by the great gastronome and journalist Luigi Veronelli. Following Angelo's passing, his son Francesco inherited Tenuta Bonzara in 1986 and combined his career as a professor of economics at the University of Bologna with his work as a passionate wine producer. Francesco oriented his business management towards pursuing better quality in the production of their wines, completely renewing the means of vinification and processing techniques in the vineyard and cellar. Among the many achievements, a score of 94/100 was assigned to Bonzarone 2001 by the prestigious American magazine Wine Spectator. Both as a producer and as President of the Colli Bolognesi Wine Consortium and of the National Wine Tourism Movement, he made tremendous contributions to enhancing the wine landscape of the Bolognesi Hills and developing wine tourism. Today the third generation of the Lambertini family, the sons of Francesco, Angelo, Silvia, and Lucia, lead the winery with the same passion transmitted by their grandfather, the same spirit of innovation as their father, and a new look towards the future of wine and viticulture.

We are in Marzabotto, surrounded by the beautiful hills of the Apennines. We are close to Monte Sole, between Bologna and Florence. Today, Alberto, the current owner, continues this tradition, applying the knowledge inherited from his father alongside modern studies to oversee all technical operations in both the vineyard and the cellar. Tastings at the winery offer a sensory journey, beginning with a walk through the vineyard, where the history of the estate and its path to becoming organic is shared. In the cellar, guests can follow the process from grape to wine. Tastings can be enjoyed in the store, garden, or terrace overlooking the valley. Local delicacies such as Mora Romagnola salami, Parmigiano Reggiano from mountain pastures, and wine jelly made from Pignoletto Superiore DOCG Colli Bolognesi are served alongside the wines.

Villa degli Olmi is a historic winery with roots dating back to the late 19th century. The winery was founded in 1970, when the owner Assirelli Aldo decided to vinify the first grapes born from the cultivation of a few hilly hectares of vineyards located in the municipality of Dozza. The next generation saw his son Vittorio determined to renovate the production cellar into a building dedicated to the complete processing of grapes and the sale of wine in demijohns, adopting in the field the method of integrated pest management to best preserve the vines on the farm. Today he is joined by his sons Matteo and Luca and his wife Anna, who, together with Vittorio, take advantage of the advice of Dr. Enologo Marco Lucchi, obtaining a 'wide range of bottled wines and vinifying not only native grapes but also international grapes from 16 hectares of estate vineyards. Attentive to innovations, the winery has recently been modernized at the production level, with innovative machinery in the cellar that allows the winemaking phases to be followed in a highly qualitative way and with a scrupulous and careful method, aimed strictly at the birth of DOCG, DOC and IGT wines of the highest quality. The winery is also equipped with a special and comfortable tasting room equipped with a fireplace and old-fashioned objects, providing direct sales in the winery with the possibility of pleasant guided tours and tastings. The "Cantina da Vittorio" has received various awards and praise in the context of various events, proving to be, for longevity and quality, one of the pillars of the culture and flavors of Dozza.
