Winery in Romagna, Hills of Rimini

About the Winery

Nestled among the rolling hills behind Rimini, between the ridge and the valley beneath the ancient Church of Santa Cristina, Delle Selve Winery is a small artisanal estate born from a deep respect for nature, biodiversity, and traditional agriculture.

Founded in 2011 by Loretta and Gianni, Delle Selve was created with the desire to preserve and restore a land that has always been shaped by vineyards, olive groves, fruit trees, woodland, and hedgerows. Today, the winery is managed by Alberto, who oversees vineyard work, production, and sales, alongside Vittoria, who is responsible for the estate’s image and communication.

The estate extends across 13 hectares, including 5 hectares of vineyards, 4 hectares of olive groves, 3 hectares of arable land, and 1 hectare of private woodland. The vineyards, planted in the early 1990s and entirely north-facing, are divided into three distinct plots and cultivate both native grape varieties such as Grechetto Gentile, Trebbiano, Vernaccina Riminese, and Sangiovese, as well as international varieties like Sauvignon Blanc and Cabernet Sauvignon.

At Delle Selve, sustainability and biodiversity are at the heart of everything. The winery follows organic and low-impact biodynamic farming practices, with a strong commitment to protecting the surrounding ecosystem. The estate is equipped with photovoltaic panels covering most of its energy needs, a phytodepuration system for wastewater treatment, and rainwater recovery systems used for irrigation.

The estate includes a restored traditional farmhouse, a modern winery with a small shop for direct sales, and an underground storage area dedicated to equipment and wine preservation.

At 150 metres above sea level, surrounded by sea breezes and protected by the Apennines, Delle Selve offers an authentic expression of this lesser-known side of Romagna — a land where nature, craftsmanship, and agricultural tradition come together to create sincere and elegant wines.

About the Wines

At Delle Selve Winery, the winemaking philosophy is deeply rooted in authenticity, respect for nature, and minimal intervention. The winery itself is a small 50-square-metre space where every stage of production is carried out with artisanal care and attention.

For vinification and ageing, the estate primarily uses restored concrete vats dating back to the 1960s. Thanks to their natural thermal properties, these historic containers help regulate temperature fluctuations without artificial intervention, preserving the purity and balance of the wines. Depending on the specific ageing needs of each wine, smaller amounts of stainless steel, fibreglass, and oak barrels are also used.

In the cellar, fermentations occur spontaneously, without additives or invasive chemical processes. The wines are produced using minimal sulphites, without temperature-controlled refrigeration, and without filtration, allowing each vintage to express its true personality and the authentic character of the terroir.

Delle Selve is fully certified organic, both in the vineyard and in the cellar. The estate follows sustainable and low-impact biodynamic farming principles, using only minimal quantities of copper and sulphur when necessary. Natural preparations are used to enrich soil biodiversity and fertility, while green manuring techniques help naturally improve nitrogen levels in the soil.

This careful and ethical approach to farming and winemaking reflects the winery’s commitment to producing sincere, high-quality wines in harmony with the surrounding environment.

The grapes cultivated on the estate give life to a range of small-batch wines, each one shaped by the unique conditions of the vintage. Without corrective interventions, every bottle becomes a genuine expression of the land, the season, and the philosophy of Delle Selve Winery.
