In the heart of Puglia, in an area known for its natural and landscape peculiarities, lies the Antica Masseria del Fano, a charming farm that combines charming hospitality with a centuries-old agricultural tradition. The Masseria Fano, whose name derives from the Latin "fanum", or "place of the gods", offers refined hospitality: 8 rooms, 5 of which located inside the courtyard and 3 set up in the characteristic Tower, a fort built by the Gonzagas of Mantua in the 16th century. Among the rooms, in an intimate atmosphere, the Suite with sea view stands out. Located in the Tower, it is characterized by very fine furnishings made with sustainable materials and with a fireplace covered in Lecce stone, as well as a terrace with a scenic sea view where you can relax at sunset. Close to the gorges of the suggestive Canale del Fano, and immersed in a unique habitat, stands the bio-lake, a body of water where you can cool off in the summer and beyond, supported by a technology that allows the pool to heat up. A natural swimming pool, in fact, perfectly integrated with the surrounding environment in the name of a sustainable vision of the holiday. In addition to the extra virgin olive oil of the Basilian monks, the Antica Masseria del Fano boasts other excellent food products intended to satisfy the most refined palates. Among these, four selections of extra virgin olive oil, the puree obtained with organic tomatoes, the black olive paté, the pomegranate vinegar and the millefiori integral honey. The latter contains the essence of the characteristic flowers of southern Italy typical of the native scrub. Furthermore, the agricultural tradition pours into the care of viticulture by selecting the best bunches from native vineyards, for the production of pure Negroamaro, unique for its red color and its aromas of dried red fruits. Production per hectare: 40 quintals Average age of vines: 6 years Grape/wine yield: 60% Wine alcoholic richness: 14,5% Harvest period: First ten days of October. Wine expert: Marco Mascellani Vineyard features: The rows are oriented from north to south. The vineyard is located a few kilometers from the sea in a rather windyarea;thefrequentnorthwinds allowtomaintainadry climate and at the same time help to mitigate the rather high summer temperatures typical of the Salento subregion. Vineyard management: When the grapes have almost reached maturity, in one of the two plots that make up the vineyard the peduncle is choked to favor a partial dehydration of the grapes. Overall, this operation raises about 30% of the production. After about 15 days the grapes are harvested and vinified together. Vinification: The crushed and de-stemmed grapes are inocu- lated with selected yeasts and fermented with maceration. The fermentation of the must takes place at a controlled tempera- ture of 24-26 ° C and lasts about 10 days. During fermentation, frequent pumping over and delestage are carried out.
