Il Civettaio

Founded in 1998, Civettaio is a small organic estate in the heart of the Tuscan Maremma, created with a clear ambition: to produce wines of exceptional quality while preserving the authentic character of this remarkable territory.

The estate covers approximately 30 hectares of vineyards, olive groves, and woodland, benefiting from the distinctive climate of Maremma. Respect for the land lies at the heart of Civettaio's philosophy, with certified organic farming used to safeguard the natural environment and preserve its Genius Loci—the unique spirit and identity of the place.

All grapes and olives used in production are grown directly on the estate, and the entire process is closely followed from vineyard to bottle. Much of the work is carried out manually, allowing careful attention at every stage and ensuring consistent quality. Alongside its wines, Civettaio also produces organic extra virgin olive oil, another authentic expression of the Maremma landscape.

Civettaio produces a range of certified organic Tuscan wines, classified under DOC and IGT appellations, with a strong focus on varieties that thrive in the Mediterranean conditions of Maremma.

Sangiovese plays a central role in the estate's red wine production, both as a 100% varietal wine and in blends with Cabernet Sauvignon and Merlot. These wines combine the distinctive personality of Tuscany's emblematic red grape with the structure and complexity offered by international varieties.

For its white wines, Civettaio works with 100% Vermentino, a variety particularly well suited to the sunny, Mediterranean-influenced landscape of coastal Tuscany, producing wines characterized by freshness and a strong connection to their place of origin.

From vineyard management to winemaking, every stage follows the estate's organic philosophy, resulting in wines that aim to capture the colors, aromas, and flavors of the Tuscan Maremma with authenticity and respect for nature.
