At Rabino Luigi, this unique tasting experience offers 4 glasses of wine paired with a creative twist on sushi made from Fassona beef – a prized local Piedmontese cattle breed, sourced and prepared by the historic Macelleria Testa of Turin (established in 1916). Each guest will enjoy 12 uramaki, all based on hand-chopped Fassona beef tartare and served in four different variations:
- Gorgonzola, speck, and walnuts
- Lardo d’Arnad, Roccaverano cheese, and hazelnuts
- Mortadella mousse and pistachio
- Saffron rice and wasabi mayonnaise

These food selections will be thoughtfully paired with 4 wines from the estate, creating a gourmet experience that blends local tradition with modern creativity.
