I Pàstini winery is located in the heart of the Valle d’Itria, one of the most distinctive wine areas of Puglia, known for its rolling landscapes dotted with trulli and its deep-rooted agricultural heritage. Founded in 1996 by the Carparelli family, the estate was created with a clear mission: to recover, preserve, and enhance the ancient native grape varieties of this territory. This vision led to extensive research in old vineyards, identifying and propagating historic vines such as Verdeca, Bianco d’Alessano, Minutolo, Susumaniello, and Primitivo.

Today, the winery extends over approximately 18 hectares of vineyards between Locorotondo and Martina Franca. The cultivation approach is strongly focused on sustainability and respect for the environment: vineyards are treated with organic products, fertilized with green manure, and carefully monitored to ensure vine health. Harvesting is carried out manually in the early morning hours, followed by a strict selection of grapes to preserve their integrity and quality. In the cellar, traditional practices are supported by modern techniques, including temperature-controlled fermentation and gentle pressing, allowing the wines to fully express the identity of the Valle d’Itria.

I Pàstini’s wine portfolio is a true expression of the Valle d’Itria, with a strong emphasis on indigenous grape varieties and a wide range of styles. White wines play a central role, showcasing the elegance and freshness typical of the area. These include Locorotondo DOP “Antico,” alongside IGP wines such as “Faraone” (Verdeca), “Cupa” (Bianco d’Alessano), and “Rampone” (Minutolo), each offering distinctive aromatic profiles, from floral and citrus notes to more structured and mineral expressions.

Red wines highlight both the tradition and versatility of local varieties. Primitivo is represented by “Arpago,” while Susumaniello—a historic Apulian grape experiencing a revival—is explored through multiple interpretations: the fresh and vibrant rosé “Le Rotaie,” the more structured reds “VersoSud” and “Le Fusa,” and blends such as “Nuove Rotte,” which combines Susumaniello with Primitivo to create balance and complexity.

The winery also produces a refined selection of sparkling wines, made using both the Charmat method and the traditional method. These include sparkling Verdeca and Susumaniello wines, as well as the “1759” label, which highlights elegance and fine perlage through classic bottle fermentation.

Completing the range is “Elogio alla Lentezza,” a sweet white wine made from Minutolo, which emphasizes aromatic richness and balance. Overall, the wines of I Pàstini reflect a careful balance between tradition and innovation, offering authentic expressions of local grape varieties and the Valle d’Itria’s unique character.
