Metodo Classico Tasting with Local Pairings at Tenuta Stella in Collio

Your visit to Tenuta Stella is dedicated to the art of Metodo Classico sparkling wine. You'll be welcomed by a member of the hospitality team for a guided walk through the vineyards surrounding the estate, followed by a visit to the barrel room where the wines age. If the weather is poor, the tour will begin directly inside the winery.
The experience continues in the tasting room, where your host will explain the production techniques of Metodo Classico, from the vineyard to the extended aging on the lees that defines these wines. You will then taste two of the estate's signature sparkling wines: the Ribolla Gialla Brut, a 100% Ribolla Gialla aged for 36 months, and the Tanni Pas Dosé, a 100% Chardonnay that rests on its lees for 60 months.
The tasting is paired with a platter of local cold cuts and cheeses, such as Prosciutto Crudo, salami, and two different aged cheeses, selected based on seasonal availability.
