About Winery and Wines
Bodegas Campo Elíseo is an exceptional winery that masterfully blends visionary innovation with deep-rooted tradition. Established in 2016, Campo Elíseo is located in the heart of La Seca, a town steeped in history and soul. The winery is housed in a beautifully restored manor house, which has been transformed into the center of their winemaking operations.
One of the most remarkable features of Campo Elíseo is its impressive network of underground galleries, situated ten meters below the surface. Originally part of the manor house, these galleries were carefully restored under the direction of François Lurton and the Rolland family, transforming them into an underground cellar. This unique space, with its naturally cool temperature of around 12°C, offers an ideal environment for the slow and balanced maturation of their wines, even when the outside temperatures soar above 40°C.
In addition to the historic galleries, a modern building was constructed opposite the manor house to receive and press the grapes. The underground cellar houses not only barrels and foudres but also ovoid concrete tanks, all contributing to the distinct character of Campo Elíseo's wines.
This atypical winery exemplifies a perfect harmony between the old and the new, creating a space where history and modernity coexist to produce wines of exceptional quality.
At Bodegas Campo Elíseo, the grape harvest is a meticulous process carried out exclusively by hand. The harvested bunches are carefully placed in 20kg boxes, with the harvest typically beginning in early September and extending into early October for some Verdejo vineyards. The grapes undergo a brief maceration with their skins inside the press to extract their fruity properties.
After the initial phase of decanting in stainless steel tanks, the musts are transferred to the winery’s underground galleries using gravity, where they begin the alcoholic fermentation process. This fermentation is conducted with native yeasts and is often extended in the cool, stable environment of the galleries, lasting anywhere from one to three months.
A key aspect of winemaking at Campo Elíseo is working on the lees, regardless of the container—whether concrete eggs, barrels, or other vessels. This process can range from 4-5 months for the Cuvée Alegre to 12-14 months for the Campo Eliseo. This careful and respectful approach to the grapes and their terroirs is central to the philosophy at Campo Elíseo, whether in Rueda or Toro, ensuring the creation of wines with soul, character, and great aging potential.
