At Ostatu, we make our wines with a clear understanding that great wine begins in the vineyard, in plots tended generation after generation, and is interpreted today through a contemporary approach that respects that identity.

Our way of working is rooted in caring for the vines, observing each vintage, and guiding the process without forcing it. We farm organically by conviction, not by trend, and we aim for each wine to honestly reflect where it comes from.

Everything starts in the soil: in how it is cared for, how each year is understood, and in accepting that no two vintages are ever the same. This respect for origin is what gives meaning to every wine and defines who we are.

Visiting Ostatu is a way to experience this philosophy firsthand—honest, close, and deeply connected to its origin. A moment to pause, feel welcomed, and understand that behind every glass, there is much more than wine.

Soil microclimate and orientation are some of the most defining geographic conditions to wines from Samaniego, where over 95% of the vines grow on an ochre coloured chalky clay soil, of generally uneven relief, with numerous gullies and small hills. It confers on them a delicate aroma and a very smooth flavour.

The height above sea level and the latitude of this area are both ideal for the development of singular vineyards. The microclimate of this particular district is complemented by the winds and the orientation of the vineyards, which are sheltered from the cold winds to the north by the ‘Sierra de Cantabria’ mountain range and arranged on south-facing slopes.

This special microclimate gives the optimum ripeness. At Ostatu we are awared of our past, present and future. And in all these stages the key element was, is and will be the vineyard. In each of our 34 ha of vineyards, divided into more than 50 plots, we make a sustainable viticulture that has been strengthening over the years.

A comprehensive vision that means taking care for the land and the environment with the utmost respect. That’s the unique valid way for us to guarantee that our wines are the best reflect of where they came from, that they show the caraceristics of the plots, their terroir.
