About the Winery
Bolyki Winery was founded by János Bolyki, a first-generation winemaker from Eger who began working with grapes in 1998 after graduating as a light industry engineer. What started as a small family activity soon turned into a full-fledged winemaking project. The first 11 hectares were planted on Öreghegy, and over the years the estate has grown to 27 hectares, shaping today’s Bolyki Winery.
The cellar is carved into the walls of a former tufa quarry, creating a striking natural setting that has become one of the most iconic spots in Eger. János began producing wine here in 2003, and as the winery expanded, new cellar spaces were added to accommodate the growing production.
In 2020, Bolyki Winery completed a modern, eco-friendly facility equipped with solar panels and state-of-the-art technology, while preserving the character and atmosphere of its historical surroundings.
About the Wines
In the Eger wine region, Bolyki Winery works with a wide range of grape varieties, making blending an essential part of its winemaking philosophy. The estate produces both of the region’s emblematic wines — the red Egri Bikavér and its white counterpart, Egri Csillag — in several quality levels. The Classicus range offers approachable, high-quality everyday wines, while the Superior and Grand Superior categories express greater complexity and a stronger sense of place.
Founder János Bolyki believes that a well-crafted blend can surpass the individual wines that compose it. Each year presents a new challenge — a changing puzzle of varieties and terroirs — resulting in unique, unrepeatable vintages. At Bolyki Winery, there is only one rule when it comes to blending: the wine must be good. Around fifteen trial blends are created and tasted several times before the best version is chosen to be bottled.
