About Winery and Wines

The company was founded in Arrigo district, on the slopes of Etna, in the beautiful territory of Linguaglossa and legend has it that the origins of the latter name derive from the tongue shape of the valley in which it rises and from the seven tongues of lava on which over time, according to tradition, the village was built.Breath and time: these are the ingredients that have always distinguished and given character to the forty hectares of vineyards of our company. For Rosario Puglia then, time has meant experience and passion handed down by his ancestors who have always worked to produce grapes of great value for a full bodied and refined wine. Since two thousand years, Don Saro winery has literally been reborn from the ashes and under the ashes "da Muntagna" as its inhabitants call it: Etna. "Si scassa 'a Muntagna, si scassa 'a Muntagna" you will hear at every new jolt and tremor of the ground. Everything that nature has of great, pleasant and terrible can be compared to Etna and Etna cannot be compared to anything (Vivand Denon). Everything in this area is influenced by the mood of the mountain and its breath. Breath, this is the other fundamental ingredient of our wine. Breath of the mountain that permeates what has the courage and strength to grow on it; breath of the sea that mitigates the climate and perfumes the vineyards of these areas; breath of an impetuous, explosive wine such as Don Saro, that must be left to decant before tasting it. After being imprisoned in the wind, in fact, our wine must patiently rest in order to gather all its flavors before being reborn a second time in your palate. Important things start from a breath: we are born and first of all we breathe. The breath gives life and is life. This is also true for the indigenous varieties of our wine. From Nerello Mascalese and Cappuccio to Nero D'Avola, Insolia, Minella, Catarratto up to Chardonnay: the entire production of Don Saro smells of life, true and wild.

Vineyards, all located in Etna's most renowned areas, extend on a surface of about 40 hectares (about 25 acres) and are impregnated with the strong and decisive character given by the lava composition of the soil which conditions and determines the life of all the surrounding vegetation. Our lava stone terraces, protagonists of the Etnean landscape, help us to drain rainwater and offer the best ventilation to our vines. Only by respecting traditions can we make wine the way we want to make it. Vineyards where a primordial viticulture is practiced, and producing an Etnean wine costs time, resources and effort. The vines are bush-trained, at high density, up to almost ten thousand plants per hectare. The manual care that Vigneri reserve to every single plant makes very few treatments necessary during the year. We harvest late, and only healthy and naturally grown bunches of grapes, in order to give life to great wines, with an Etnean character. All of our vineyards are planted with alberello vines at very high density. We preserve and take care of the old vines we found, many of them are more than one hundred years old, and with the same love we plant the new ones, respecting the Etnean culture and traditions.
