About Winery and Wines
In the heart of Daunia, between the Subapennino Dauno and the Gargano promontory, lies San Severo, a city renowned for its ancient winemaking traditions.
The name Cantine Re Dauno is inspired by the legendary union between Evippe, daughter of King Dauno, and the Greek hero Diomedes. According to myth, upon arriving in Capitanata, Diomedes founded a new city and named it Castrum Drionis in honor of his wife—a name that evolved into modern-day San Severo, where the winery is proudly based.
Situated in the historic center of San Severo, Cantine Re Dauno occupies a striking 1927 building that preserves the charm of the past. Its evocative underground cellars, distinguished by grand cross-vaulted ceilings in clay brick, maintain a constant temperature between 12°C and 18°C—ideal conditions for refining Classic Method Sparkling Wines in an environment that is both atmospheric and steeped in history.
Pas Dosé
The Pas Dosé is the driest sparkling wine produced by Cantine Re Dauno, made exclusively from White Bombino IGP Puglia vintage grapes—a native variety of the Capitanata region in Puglia. Without the addition of liqueur d’expédition, the base wine is allowed to express its full personality, resulting in a profile that is both elegant and refreshingly crisp on the palate. Its bright straw-yellow color with greenish reflections introduces a vibrant bouquet, offering notes of pineapple, bergamot, winter melon, and a subtle touch of bitter almond. A refined companion for an entire meal, it pairs beautifully with aperitifs, fish, shellfish, and white meats.

Its aromatic profile is bold and expressive, featuring notes of gooseberry, red currant, wild strawberry, raspberry, and violet.
