The heart of Dominio di Bagnoli is without doubt its cellar, one of the oldest buildings in the complex, a building of the former Benedictine convent. For centuries in the fascinating interior, with walls a metre thick and a gothic double vaulted ceiling, the wine has matured in large 5000 litre barrels of French oak, and in smaller barriques. Alongside this ancient underground area, where the humidity and the constant temperature provide optimal conditions for ageing wine, is found the modern cellar for vinifying wine where the work with the grapes takes place, carried out by technicians and machinery. In the cellar is preserved an interesting collection of barrels, wine presses and antique agricultural machinery.
