The ColSanto Estate, marked by the distinctive Winged Woman emblem of the Livon family, is situated in the heart of the Strada del Sagrantino, surrounded by its distinctive fan-shaped vineyards. Visitors are greeted by an iconic entrance: a double avenue of cypress trees leading to the historic 18th-century farmhouse at the estate’s core.
Through two decades of extensive renovation and investment, the original 18th-century structure has been transformed into a charming wine shop and tasting area. The panoramic tasting room features a stunning view of the Umbrian Valley, with the medieval towns of Assisi and Spello in the distance. The refined design of the building complements the surrounding natural landscape beautifully.
The Livon family has also invested in enhancing hospitality to fully leverage the region's wine tourism potential. The B&B has expanded from 6 to 12 rooms, including 6 double rooms, 3 suites, and 2 apartments. Each accommodation is elegantly furnished and equipped with modern comforts, offering a serene countryside retreat with convenient access to local attractions. A new addition to the estate is the swimming pool area, located at the highest point of the estate, providing a view of Assisi and exclusive access for B&B guests.
At the heart of ColSanto is winemaking, which drives the estate’s operations. The production philosophy emphasizes sustainability and ongoing research into innovative agronomic practices that respect both nature and consumer needs. This comprehensive approach ensures the delivery of exceptional wines and an unforgettable wine tourism experience.
The vineyard at ColSanto Winery employs the spurred cordon training method, with red grapes including Sagrantino, Sangiovese, Montepulciano, and Merlot, while Trebbiano Spoletino is used for white wine. The vineyard's intensive planting, with approximately 7,500 vines per hectare, focuses on producing a less voluminous but higher-quality yield.
In Umbria, the Livon family is dedicated to crafting exceptional DOCG reds from Montefalco, including Montefalco Rosso — a blend of three grape varieties — and 100% Montefalco Sagrantino. The company’s philosophy emphasizes the use of both hungarian and french barriques, as well as temperature-controlled barrels.
In the cellar, the passage of time is crucial, with excellence achieved through extended aging and meticulous processing in small volumes.
