About the Winery
Favazza Etna Winery is a producing winery dedicated exclusively to Mount Etna, created with the aim of interpreting the volcano through indigenous grape varieties, small producers, and a rigorous reading of the territory. Favazza directly cultivates and oversees vineyards located on the eastern and northern slopes of Etna, at around 700 meters above sea level, in a context where altitude, wide diurnal temperature ranges, and volcanic soils naturally shape wines that are taut, saline, and vertical.
Production focuses on Carricante, Catarratto, and Nerello Mascalese—varieties that on Etna demand precise vineyard management and carefully measured winemaking choices.
Alongside its own production, Favazza highlights a selection of small Etna producers—artisanal realities working on micro-parcels and sharing an agricultural vision that respects volcanic soils and the rhythms of the volcano. The wines presented thus portray Etna as a mosaic of differences, where exposure, altitude, and lava flows generate clearly identifiable sensory identities.
The estate is set within an agricultural and natural landscape that can be freely explored: vineyards, an organic garden, Victorian greenhouses, an orchard, and the 1971 lava flow are all part of a living environment, crossed by a circular path with interpretive stations that help visitors understand the relationship between viticulture, volcanic soils, and the evolving Etna landscape.
The tastings are conceived as moments of territorial interpretation, aimed at a thoughtful and informed audience interested in understanding Etna through wines produced and selected with coherence, without tourist mediation. About the Wines
Fiurì – IGT Terre Siciliane 2024
60% Catarratto, 40% Moscato d’Alessandria – Salaparuta (TP), 400 m a.s.l.
Vinified under strict reductive conditions, with 24 hours of cold pre-fermentative skin maceration, stainless-steel fermentation and lees ageing.
The result is a taut, citrus-driven and saline white wine, with notes of peach and a direct, incisive freshness that favors technical drinkability and aromatic precision.
Diatrema – Etna Bianco DOC 2023
Carricante and Catarratto Lucido – eastern slope of Mount Etna, 700 m a.s.l., volcanic soils
Hand-harvested grapes, cryomaceration and temperature-controlled fermentation. Extended ageing in stainless steel followed by further bottle ageing.
A distinctly maritime and vertical profile, with clear citrus notes, pronounced salinity and a persistent finish that faithfully reflects altitude and volcanic origin.
Nùra – Sicilia DOC 2024
Nero d’Avola – Salaparuta (TP), 200 m a.s.l.
Rosé obtained through vinification in a controlled atmosphere, stainless-steel fermentation and short ageing.
Intense pink color; floral and spicy aromas on the nose; fresh, dry and linear on the palate, designed to express the grape variety in an essential, food-driven style.
Burkan – Etna Rosso DOC 2020
Nerello Mascalese – northern slope of Mount Etna, 700 m a.s.l., volcanic soils
18-day maceration, stainless-steel fermentation, ageing for about one year in stainless steel followed by 14 months in French oak, and subsequent bottle maturation.
A structured yet restrained red wine, with notes of sour cherry, floral and spicy nuances, marked freshness and a savory finish, fully consistent with the classic style of northern Etna.
