Kajabaca

About the Winery

Kajabaca produces high-quality berry wines in Finland, a country not traditionally known for wine production, as it is not considered a grape wine-producing country according to EU criteria. Finnish summers are short but filled with long, sunny days. While the growing season can be challenging for grapes, berries develop powerful flavors during these bright summer days. In Kajabaca wines, you can taste the intensity of the Finnish summer through berries such as red gooseberries, green currants, and blackcurrants.

Kajabaca is a small winery that produces fine berry wines in the spirit of slow wine. It is an excellent place to visit and taste wines that are truly different.

Kajabaca was established in 2018 by Asta and Pekka. Although they had no previous experience in farming or winemaking, they had a clear vision: to create a berry farm where berries would be grown without pesticides. Combined with pure deep-well water, these clean berries would become high-quality wines with strong aromas and distinctive character.

Visitors are welcome to discover the winery, learn about its story, and taste how this vision has become reality.

About the Wines

Kajabaca wines are fermented slowly and gently aged at a low room temperature, allowing them to develop a rich taste and bouquet. Since berries naturally contain plenty of acidity, a small amount of sugar is added after fermentation to create a balanced wine. This is the main difference compared to grape wines. Due to their natural acidity, the sugar content may classify the wines as sweeter than they actually taste.

The clarity of Kajabaca wines is achieved through sedimentation only. The wines are not filtered, and only a minimal amount of sulphur is added. For this reason, we recommend consuming them within 6 to 12 months after bottling.

Because the wines are unfiltered, they may contain a small amount of sediment in the bottle. Filtration removes excess particles from wine, including some elements that contribute to color and taste, which is why Kajabaca wines are left unfiltered. Once opened, the wines should be stored in the fridge.
