About Winery and Wines

Founded in 2006 by Gianfranco Daino, the homonymous winery extends within the Bosco di Santo Pietro reserve, south of Caltagirone in Sicily, surrounded by a context of natural beauties. The winery was born from the will to carry on a tradition handed down for centuries by the hands of skilled farmers who made the cultivation of Nero d'Avola, Frappato and Alicante a characteristic element of the Caltagirone territory. It is precisely by following the ancient methods of the wise winemaking tradition and the protocols of organic farming that we are able to guarantee a wine of extraordinary quality. Thanks to the skills of the Vigneri - staff specialized in the cultivation of Aegean sapling - we take care of the vines in every phase of their cycle, with manual processing in respect of the environment and in full harmony with the territory. The alberello cultivation, together with the healthy and natural environment guaranteed by the Bosco and the peculiarities of the red Mediterranean soil, allow us to obtain healthy and perfect bunches of grapes and to produce our wines without the use of chemical products and with a low quantity of sulphites well below the legal limits. Among the principles that guide our activity, the valorization of resources and local culture is certainly in the first place, aware of the extraordinary richness that our territory offers us.

For centuries, in the territory of Caltagirone, the wise work of the farmers has handed down until today the cultivation of Nero d'Avola, Frappato and Alicante, making them become typical elements of the territory and culture of Calatino. The Daino farm cultivates its vineyard following the traditional techniques of breeding respecting the environment and the natural development of the plant and the fruit. The different phases of cultivation are carried out manually: from the planting of the vineyard to the subsequent phases of cultivation every single vine is entrusted to the attention and care of man. The pruning of vines follows the phases of the moon and it is done by using scissors made, as it was done in the past, by local artisans. Superficial roots are eliminated in order to stimulate the plant to go deeper. The so called "green pruning" is also very important in order to balance the vegetation of the plant during summertime and to contain the foliage. The soil is enriched with nutrients, thanks to a natural and organic fertilization (sheep and horse manure) according to the rules of organic farming.
