Zervas Winery

In the valley of the ancient river Thiamis, today's Kalamas, in the tributary Thesprotia, the Zervas family cultivates its vineyards with respect for tradition and commitment to quality. With special care in cultivation, harvesting, processing, bottling, and presentation of our wines, we can assure you that they are worth trying.

Our modern winery is based in Parapotamos, Thesprotia, and covers an area of 800 square meters and is undergoing certification as a bioclimatic winery.

We use modern winemaking techniques in a building that is operated to fully exploit the force of gravity, minimizing the use of pumps while respecting the purity of the grape and the quality it offers us. Our wines come from the best grape juice only, and many winemaking stages are done manually.

Since 2022, the winery has been open to the public, offering tours, tastings, and organizing events.

Our privately owned vineyard is located around the winery in the area of Parapotamos of Thesprotia and covers an area of ​​35 acres.

The region is influenced by the cold air masses that descend from its mountain range. In addition, the special terroir is shaped by the Thyamis River (Kalamas), which, thanks to its constant breeze, creates a temperature difference between day and night, and more humidity, resulting in excellent ripening of the grapes. Our philosophy is based on the quality of the raw material.

The varieties we cultivate are the indigenous Asproudi, Mavroudi, the abundant Vertzami, Muscat of Rayon, and Malagouzia, as well as Syrah. Their cultivation is done carefully and in controlled acre yields.

Wanting to emphasize the dynamics of the Asproudi variety that we received from our parents, we continued with new plantings of the variety in different vineyards.

With respect for nature and our vineyards, we maintain an organized regime of fertilization and plant protection management, and organic weed control.
