Step into La Vecchia Dispensa and enter a world shaped by history, tradition, and time. Set within a medieval tower, the acetaia preserves an atmosphere where ancient rituals and patient craftsmanship define every moment. The air is filled with the scent of wood, cooked grape must, and the evolving aromas of Balsamic Vinegar as it slowly matures in the barrels.
During the visit, you will uncover the secrets of the Traditional Method and learn about the heritage of the family, whose passion has been passed down since 1905. At the heart of this story are the women of the family and the Masters of the Acetaia, who have shaped its identity over generations.
The experience concludes with a guided vertical tasting of four family reserves, allowing you to appreciate the evolution of the balsamic vinegar over time, culminating in the exceptional Centenary.

This experience is reserved for participants over 10 years of age.
The tours take place inside a Medieval Tower and include stair climbs (30 steps in total), some of which are spiral, so spaces are quite limited. For safety reasons, the tower is not accessible to children under the age of 10, even if accompanied. Access to the tower is not recommended for people with severe mobility problems, severe claustrophobia and/or vertigo.N.B. If you are unable to access the tower, please let us know: we have an alternative route available.
