Discover Balsamic Vinegar with this experience at Acetaia La Vedetta, immersed in the hills of Castelvetro di Modena!
Acetaia La Vedetta is situated on a hillside, about 20 minutes from Modena and 30 from Bologna, surrounded by rows of Lambrusco and Trebbiano, typical grapes used to produce balsamic vinegar.
Claudio or Gianfranco will be happy to welcome you and accompany you on this culinary tour. They will show you the various machinery and rooms, inside the acetaia, used for the production of Modena's black gold. One room that few vinegar cellars possess is the room where the cooked must, the only product to be used according to PDO specifications for balsamic vinegar, naturally acidifies thanks to the fermentation of acetobacteria.
The visit will then continue in the aging room to conclude with a spoon tasting of the Aceto Balsamico Tradizionale DOP, Condimento della Famiglia Venturelli, Aceto Balsamico di Modena IGP and other Condimenti. Next, you will have the opportunity to taste some typical pairings of this wonderful territory, also known as Italy's Food Valley, such as Parmigiano and Vinegar, Bruschette with Caramelized onions, and a good glass of wine.
