Natural Wine Cooking Class & Foraging at Fattoria La Maliosa in Saturnia
Here is what's in store for you
You'll be welcomed by Francesca, a cook with training as a holistic practitioner in Phytoalimurgy, who will be your guide for a four-hour immersion into the flavors of Maremma. Your day starts with a walk through the estate's Monte Cavallo vineyards. Here, you'll learn to identify and gather the wild herbs that grow among the vines, understanding their properties and traditional uses in local cuisine. After the walk, you'll move to a private, panoramic tasting room with a fully equipped kitchen. Guided by Francesca, you will have a hands-on class preparing two staples of Maremman cooking: a pesto made with the herbs you just gathered, and traditional gnudi, using the farm's own organic extra virgin olive oil. The class is designed to be accessible to everyone, with no previous cooking experience needed. The experience concludes around the table, where you'll enjoy crostini with your wild herb pesto and the freshly made gnudi. This meal is paired with a guided tasting of two of the estate's natural wines: Saturnalia Bianco, a macerated white from Procanico and Trebbiano grapes, and Saturnalia Rosso, a blend of Ciliegiolo, Sangiovese, and Cannonau Grigio. During the tasting, you'll hear the story of the wines, the production methods, and the history of Fattoria La Maliosa. As a keepsake, you will receive the recipe for the dishes you prepared in both printed and digital format.
