Parmigiano, Balsamic & Winery Tour with Light Lunch from Bologna
Here is what's in store for you
Your tour begins with a drive from Bologna to the first stop: a traditional dairy where Parmigiano Reggiano is handcrafted each morning. You'll enter the production rooms to see the Master Cheesemaker transform fresh milk into the final golden wheels. The visit is followed by a tasting of 12-month-aged and 24-month-aged Parmigiano Reggiano cheeses, accompanied by ricotta, balsamic vinegar, salame, Erbazzone savory pie, and Parmigiano Reggiano chips.
Next, you'll enter the aromatic world of an ancient Acetaia to discover the process behind traditional Balsamic Vinegar, walking among centuries-old wooden barrels. The experience culminates in a technical "spoon tasting" of several vinegars, allowing you to appreciate the complex notes of each selection, including a unique cherry-based condiment produced on-site.
The morning ends at a family-run winery in the countryside. They will welcome you for a walk through the vineyards with a glass of fresh Pignoletto, a local white wine. You'll also enjoy a guided tasting of two other local wines, Lambrusco and Barbera, served alongside a light country lunch. The meal features a selection of local cured meats like prosciutto crudo and mortadella, artisanal cheeses, fennel and carrots (or other fresh seasonal vegetables), breadsticks, and fresh bread.
